Miso-Tahini Sauce - 5g Carbohydrate; 2g Dietary Fiber

1/4 cup tahini -- sesame paste
1 tablespoon mellow white miso paste
1 tablespoon fresh lemon juice
1 teaspoon soy sauce
1 cup water
In a small saucepan, combine the tahini, miso paste, lemon juice, and soy sauce and heat over low heat. Add the water a little at a time, stirring constantly until smooth.
Cook until heated through, about 10 minutes. Do not boil. Serve immediately. If not using right away, cool the sauce to room temperature, transfer to a container, cover, and refrigerate until needed. Properly stored, the sauce will keep for 2 to 3 days. Reheat the sauce in a saucepan over low heat until hot.
Makes 1 1/3 cups (4 one-third cup servings).
Try this savory sauce over roasted or grilled vegetables, rice and beans, or baked tofu or tempeh.
