Palestinian Chickpea Appetizer - Hummus Habb

2 cups cooked chickpeas -- or canned
1/4 cup olive oil
1/4 cup lemon juice
6 garlic cloves -- crushed
1 teaspoon salt
2 tablespoons finely chopped scallions
2 tablespoons finely chopped fresh cilantro
1 tablespoon finely chopped fresh mint
Thoroughly mix all ingredients except the mint; then place in a serving
bowl and refrigerate for 1 hour. Just before serving, garnish with mint.
Serves 4-6.
This simple appetizer does not need any great effort to make, yet it is
very tasty.
Note: Chives may be substituted for the cilantro and 1/2 teaspoon of dried
mint for the fresh mint.
