Diabetic Split Pea Spread

Amount Measure Ingredient -- Preparation Method

2 cups cooked split peas
1/3 cup tahini -- (sesame seed paste or butter)
1/4 cup lemon juice
1 teaspoon garlic powder
1 1/2 teaspoons dried mint
1/4 cup water

Place all ingredients in a food processor or blender. Blend until creamy.
May need to add extra water if too thick.

Serve as a sandwich spread or dip with vegetables and crackers.

Serves 4.

ChupaNote: also makes a great soup base thinned with broth, and topped
with minced raw red onion, bell peppers, and carrots for crunch.
