A FINNISH OVEN PANCAKE

  2 eggs
  1 tbsp. sugar or Stevia
  1/2 c. milk
  1 tbsp. butter for pan
  1/4 tsp. salt
  1/4 c. flour

Melt the butter in the pan. Beat eggs and add ingredients
as
for any pancake. Add to heated, buttered pan and bake for
12-15 minutes, or until puffed and brown, 450 degree oven.
It is delicious served with fruit sauce made as follows.

Fruit Sauce: Heat 2 cups orange juice, sweeten with honey
to taste. Thicken lightly with cornstarch or arrowroot flour.
Add any fruit on hand. Apples, bananas, grapes, nuts,
dates, etc.

If you're in a hurry; just nuke some berries or fruit with a
little honey or brown sugar or Srevia.
