Zamouri Fried Falafel (from
dried beans) with Falafel Spice Blend -

1 cup dried garbanzo beans -- soaked in water to cover overnight, rinsed and
drained
1 cup dried shelled fava beans -- soaked overnight, rinsed and drained
1/2 cup finely chopped onions
3 cloves garlic -- peeled and
crushed (or equivalent garlic powder)
1 cup water
1/2 cup sesame seeds
1/2 cup garbanzo flour
1/4 cup fine bulghur -- (cracked wheat)
1/4 cup finely chopped parsley
1/4 Tablespoon salt
4 teaspoons [Zamouri Spices] Falafel Spice Mix -- (4 to 5)
2 teaspoons baking powder
1/2 teaspoon cayenne pepper
1/4 teaspoon freshly ground black pepper
To cook: -- oil for deep-frying
To serve: -- pita bread
Blend the drained garbanzo beans and fava beans in your food processor.
Mix all the remaining ingredients and let the mixture stand for 1 hour.
Form into 2 inch patties.
Deep-fry in 375° oil until toasty brown and crunchy on the outside; about
3-4 minutes.
Fill pita bread with falafel and your choice of condiments such as sliced
tomatoes, Turkish salad, sliced onion, tahini, sliced cucumber, hot green
peppers, lettuce.
Makes about 24 patties (6 sandwiches). Falafel balls can also be served
separately as appetizers with dips.
Chupa Note: Middle Eastern markets will have cracked shelled fava beans.
After you drain them, spread them out on a flat tray or plate to dry. You
want as much of the moisture gone as possible.
