 Preheat the oven to 425 degrees. Brush the tortillas with the pure 
 olive oil and bake for 3-4 minutes or until they start to crisp. 
 Heat 1 tablespoon of water in a saute pan and cook the spinach 
 and garlic for 2-3 minutes. Take the tortillas out, layer them 
 with the cheese, spinach and tomatoes and bake for 3-5 minutes 
 more or until cheese is melted. Garnish with the chopped basil 
 and cut into slices.

 2 6" Food for Life Ezekiel Sprouted Whole Grain Flourless Tortillas
 1 tsp pure olive oil
 1 cup fresh spinach, chopped
 1 clove garlic minced
 1 small tomato, seeded and diced
 1/2 cup low-fat mozzarella cheese, grated
 1/4 cup fresh basil, chopped
