I tend not to feel well at 20 g/day or under. Maybe I will over time, as it might be a transition issue, but for now, I need to keep it at a minimum of 40-50.

Yes, for me, there seems to be a direct correlation as to how deep (read: purple on the strips) and the fatigue, chills, and overall blah feeling I get. As long as I keep it in the pink or light purple range, which requires a few more carbs, I feel great (though I don't really test often anymore). Dip below, and ugh. As I said above, this may be related to transition, and may not be a problem after my body gets more used to it again. I also make sure to take potassium, but it doesn't seem to help the awful feeling if I go too low.

You mentioned the sugar alcohols. That was my reference to the Atkins bars and other low-carb goodies. The effects on my digestive system when I take even a bite of sugar alcohols are instant and very unpleasant. I once had to leave work after eating a handful of sugar-free candy.

That's a possibility. But after many years with no bread and very few grains because of being gluten-free, I find that having a slice of bread now and then is a huge treat, because it allows me to have more "normal" things that I used to enjoy. I love, love Udi's bread, and it's a quality/ease of life thing. I especially like the multi-grain and the raisin bread. They are pretty much the first real bread I've had in over 13 years. Plus, I know from past experience that as long as I keep overall carbs low, a few grains aren't a deal killer for me in terms of weight loss. So, one slice a day a few times a week seems very doable. I'm not a big nut for nuts (get it?) so the few I occasionally have don't seem to be a problem.
