Slow Cooker Sicilian Cauliflower with Raisins and Pine Nuts

1 medium onion -- chopped
3 tablespoons olive oil
1 1/2 cups peeled, seeded, and chopped tomatoes -- fresh or canned
1/2 cup dry white wine -- or tomato juice
1 1/2 pounds cauliflower -- (1 large) trimmed and cut into florets
1/4 cup dark raisins
1/4 cup pine nuts
salt and freshly-ground black pepper
2 tablespoons finely chopped fresh flat-leaf parsley

In a small skillet, cook the onion in the oil over medium heat until very tender. Stir in the tomatoes and wine or juice and bring to a simmer. Cook for 1 minute.

In a slow cooker, combine the cauliflower, raisins, pine nuts, tomato mixture, and salt and pepper to taste. Cover and cook on HIGH for 2 hours, or until the cauliflower is tender when pierced with a knife. Sprinkle with the parsley and serve hot.

Serves 8.

AuthorNote: If you are having a hard time convincing your family to try cauliflower, serve them this recipe. It is easy to love! The vegetable is smothered in a tasty tomato sauce with sweet bits of raisins and pine nuts. Sometimes I mash the cooked cauliflower and serve this over pasta.
