Slow Cooker Spinach Parmesan Sformato

1 pound spinach -- cooked, cooled, squeezed in a towel to extract excess liquid
6 large eggs
3/4 cup freshly grated Parmigiano-Reggiano cheese
1 pinch finely grated nutmeg
salt and freshly-ground black pepper
1 tablespoon melted unsalted butter
Place the spinach in a food processor and blend until smooth. Add the eggs, cheese, nutmeg, and salt and pepper to taste. Blend until smooth.
Brush a 6-cup souffle dish or a heatproof bowl with the butter. Pour in the spinach mixture. Place it in the slow cooker, cover and cook on high for 1 1/2 hours, or until the mixture is just set when a knife is inserted in the center.
Carefully remove the sformato from the slow cooker. Run a small knife around the inside of the dish and invert it onto a serving plate. Serve hot.
'Sformato' is the Italian word for food that is shaped in a mold and served unmolded. Think of this as a fallen souffle or molded omelet. Serve it for brunch with a tomato salad and bread or as an elegant side dish with a roast [Favorite]. For a more elaborate presentation, surround the sformato with sauteed mushrooms or peas.
Spinach is delicious prepared this way, or try another vegetable, such as broccoli, asparagus, peas, or green beans. You will need 1 cup of pureed cooked vegetables.
