Liver is my organ meat of choice, Beef or chicken. Chicken livers sold in store in a cottage-cheese type carton and calves liver is usually sold sliced and frozen in styrofoam tray. Fry up onion slices in lard coated pan, shove them aside and fry the liver in covered pan. Then pour all the juice and onions on top of the liver on the plate with a bit of salt and pepper.

I plan on leaving a midday Thursday eating window open for all kinds of goodies, way beyond the lower carb I usually eat. Crescent rolls and pumpkin and pecan pie are jumping in along with the turkey. ;-)
We'll just have to count on Fast 5 to bail us out with such a large departure from our usual diet, for a special day.
