Rick - you might consider doing some research on my best friend, the sweet potato. There is not another vegetable that matches its nutritional profile, it's got good quality carbs at a much lower GI than a regular starchy potato, and I think it would do wonders for your mid-day mood, seriously. I can't recommend them highly enough. I like them when they have the consistency of pumpkin pie, so I scrub them, wrap them in tin foil and bake them for an hour and then just shut the oven off. Some time later (or even the next morning) I'll throw them in the fridge and they make perfect little food-grenades. Look them up - you'll be impressed.
