[Healthy_Recipes_For_Diabetic_Friends] Recipe: Crab and Cilantro Salad

Crab and Cilantro Salad
A light and delicious salad that's perfect for a summer picnic.

Ingredients

1/4 cup red onion
2 Tbsp cilantro, chopped
1/2 tsp ground cumin
1/2 tsp lime zest
3 Tbsp fresh lime juice
3 Tbsp light mayo
8 oz crab
3 cups romaine lettuce, chopped
2 small tomatoes, quartered
1/2 avocado, diced

Directions

Mix first 7 ingredients & season with salt & pepper to taste.
Combine last 3 ingredients and divide between 2 bowls.
Top each with 1/2 of the crab mixture.
