I definitely agree that people are often misled by the "5 hour eating window" and shy away from one meal a day minimalist approach.

After experimentation, I'm seeing that eating that big Breakfast of fat and protein shortly after I wake is preferable to holding off to the Book default 5:00 PM. You are fully fed during the daytime when most active, then sleeping is a time period where you will be unaware that you are reaching end of fasting period.
Gary Taubes, Eades and Barry Groves realize that Carbohydrates such as Grain, which turns into Sugar as soon as it reaches the saliva in the mouth are at the root of insulin rises.

The Minimalist approach also means to not get hung up on Counting. You are minimizing the amount of time you are eating and causing insulin to rise, while the Fasting period is when your Insulin levels are decreasing. Eat plenty of fatty meat/eggs at your Breakfast to Fill, and it will hold you over for the needed 20 some hours of continual fasting, something that Grains will Not do. In fact, those type of Carbs typically cause cravings for more.
Speaking of D.C. I noticed Michelle "the Obesity Czar" is hanging out in front of Walmart bragging about how her Corporate/Gov new eating recommendations are going to lower Sugar and Salt levels, yet no mention of all the Grains (at base of Food Pyramid for years) which quickly convert into sugar, like the Fructose sugar in the Fruit Govt. always recommends. I wish they would break from alphabetical order and call them "Green Vegetables and Fruits". And we will be better off if we put Fat, then Protein at the crux of our own eating plans.
Avoiding grains as much as possible is my belief as the Best answer for What to eat.
If you are going to Intermittent Fast, you need to eat enough of the Right Stuff, to be able to hold you over for 20 some hours until you next Break Fast.
