Pour-it-on Barbecue Sauce

1 1/2 cups reduced-sugar ketchup -- such as Heinz
1/2 cup onion-garlic puree -- see below
1/4 cup Worcestershire sauce -- vegetarian
2 tablespoons yellow mustard
1/4 cup cider vinegar
1 tablespoon molasses
2 packets Truvia -- or other sugar substitute
1 teaspoon garlic salt
2 tablespoons liquid smoke flavoring -- such as Stubb's
Combine all of the ingredients in a medium saucepan over medium heat. Bring to a simmer, then reduce the heat to low. Simmer, stirring occasionally, until the sauce is thick, about 30 minutes.
Allow the sauce to cool. Store it in a covered container in the refrigerator for up to 5 days.
Makes 2 cups (16 two-tablespoon servings).

Microwave Onion-Garlic Puree

1 large Vidalia onion -- roughly chopped
9 garlic cloves -- roughly chopped
1/2 cup water
salt and freshly-ground black pepper -- to taste
Combine the onion, garlic, and water in a microwaveable-
Pour the mixture into a blender and blend until it is completely smooth. Season with salt and pepper to taste, if desired. Store in a covered container in the refrigerator for up to 72 hours.
Makes 1 cup (4 quarter-cup servings).
This aromatic puree is designed to be a base ingredient and is a great way to build flavor and texture without adding fat. It eliminates the need to add a lot of butter and cream.
ChupaNote: This is a great condiment to keep in the fridge. I use whatever left-over broth or stock I have in place of the water and add 1/2 teaspoon red pepper flakes for extra layers of flavor.
