Easy Lovely Lemon Chicken - 11.2g Carbs, 4.6g Fiber

"The reliable standbys of lemon and garlic get a flavor boost
from the addition of curry to this baked chicken dish."

Cook Time: 1 Hour
Ready In: 1 Hour 15 Minutes
Servings: 5

1 (4 lb) whole chicken, cut into pieces
4 lemons, halved
6 cloves garlic, minced
1 Tbsp curry powder
Salt and pepper to taste

1. Preheat oven to 350 degrees F (175 degrees C).

2. Place chicken pieces in a 9x13 inch baking dish. Squeeze lemon
halves over the chicken, then sprinkle with the garlic, curry powder
and salt and pepper to taste.

3. Bake at 350 degrees F (175 degrees C) for 1 hour or until chicken
is cooked through and juices run clear.

What an easy recipe! I used whole boneless chicken breasts, and
covered the casserole dish with foil for the first 40 minutes
of baking time. I also topped the chicken with olive oil for
more moistness. I served the chicken with garlic dill potatoes.
