Sweet Potato Hash - 33.2g Carbs, 5.2g Fiber, 1.2g Sugar

As a savory side dish or a brunch main served with eggs, this cooks up in no time. The only somewhat time-consuming aspect is dicing the sweet potato, so if you're serving this in the morning then get those diced the night before.

Servings: 4
1 Tbsp olive oil
4 strips bacon, chopped
1 lb sweet potatoes (about 2 medium), peeled and 1/4-inch diced
2 green onions, thinly sliced
1/2 cup diced red bell pepper
1/2 tsp dried thyme
Salt and freshly ground pepper, to taste
In a large nonstick skillet over medium heat, heat the oil and the bacon. When the bacon fat begins to render, about 1 minute, add the sweet potatoes in an even layer. Let cook until the potatoes are browned on the underside, about 4 or 5 minutes. Stir the potatoes and let brown on all sides, cooking about 4 minutes more, stirring twice.
Add the onion, bell pepper and thyme and cook, stirring frequently, until the onion and red pepper are softened, about 1 to 2 minutes. Season with salt and pepper and serve.
