2 lb potatoes, peeled and cubed
2 Tbsp canola oil
2 Tbsp grated ginger
1 tsp chili powder
1/2 tsp turmeric powder
2 tomatoes, diced
Salt, to taste
Combine all the ingredients in a baking tray.
Season with salt to taste.
Cook in the preheated oven at 350F for 40 minutes.
Serve the potatoes warm.
