Okra Curry - 8.9g Carbs

1 lb okra, trimmed and sliced
1 Tbsp olive oil
1 shallot
1/2 tsp curry powder
1/2 tsp chickpea flour
Salt, to taste

Microwave the okra for five minutes.

Heat the oil in a skillet. Add the shallot and saute for 5 minutes then stir in the curry powder, chickpea flour and okra.

Season with salt to taste and cook five to seven minutes, stirring often.

Serve immediately.
