Roasted Salmon With Maple Glaze - 10g Carbs, 0g Fiber

3 pounds salmon fillet
1/4 cup maple syrup
1 garlic clove
1/4 teaspoon kosher or sea salt
freshly cracked black pepper
1/4 cup balsamic vinegar
mint or parsley, chopped, optional

Preheat oven to 450 degrees. Pat salmon dry.

Place skin-side down onto baking sheet that has been sprayed generously
with non-stick spray.

Brush fish with maple syrup. Bake about 10 minutes; brush again with maple syrup.

Bake another five minutes. Continue to baste and bake until fish flakes
easily.

Serve with salt and cracked black pepper. Top with remaining syrup.

Makes 6 servings.
