{Suggestions: I adapted this a bit when running the information for the nutrition, however, it is still a bit high in sodium... most likely from the chili seasoning. If you add your own chili seasoning and leave the sodium out this will further improve the nutrition. Take Care, Gloria}

1 head Cauliflower, diced
1 Fennel bulb (cored and diced)
1 lb ground turkey OR beef
1 pkg chili seasoning (1 1/4 oz)
2 (14 oz cans) diced tomatoes, no salt added, undrained
1 (15 oz can) red kidney beans, rinsed and drained
1 (8 oz can) tomato sauce, no salt
1 (6 oz can) tomato paste, no salt
1/2 tsp ground allspice
1 cup shredded cheddar cheese, reduced fat
Green Onions, chopped (optional garnish)
Brown ground meat in large skillet, stirring to break up meat; drain fat. Place cooked meat and all the other ingredients, except cheese and Green Onions, in a 4 1/2 quart crock pot, slow cooker. Stir to combine. Cover and cook on low setting for 4 to 6 hours or on high 2 to 3 hours.
Top each serving with cheese and Green Onions, if desired.
