Sumac and Onion Relish - Middle Eastern

4 medium onions -- peeled
4 teaspoons extra-virgin olive oil
2 tablespoons ground dried sumac
1 teaspoon salt
1 pinch cayenne pepper
Cut onions in half from top to root end. Slice halves thinly crosswise and place in a large bowl.
In a small bowl, mix olive oil, sumac, salt and cayenne pepper. Pour oil mixture over onions and blend thoroughly but gently.
Let rest for 6 hours, stirring occasionally.
Yield 2 cups (8 one-quarter cup servings).
SUMAC - A spice made from the dried, powdered berry of the Middle Eastern sumac variety. It is a major component of Za-atar. Sumac has a very nice, fruity-tart flavor that is not quite as overpowering as lemon. It imparts a deep red color that makes a very attractive garnish.
