Dried Apricot, Currant and Orange Gremolata

3/4 cup dried apricots
1/4 cup currants
1/4 cup candied orange peel

Combine the apricots, currants, and orange peel in a food processor and pulse until finely chopped. Refrigerate until needed.

Makes 1 1/4 cups (20 one-tablespoon servings)

The apricot-orange gremolata will add a bright pumpkin color to any food.

Serve with poached fruits, or sprinkle on muffins before baking. At breakfast, pour over pancakes, waffles, or French toast, or stir into hot or cold cereals.
