3 large green peppers -- finely chopped
5 thin scallions -- trimmed and finely chopped
2 large garlic clove -- finely chopped
2 teaspoons olive oil
1/2 teaspoon dried rosemary -- crushed
1/2 teaspoon dried thyme -- crushed
1/2 cup fresh parsley -- finely chopped
1/2 cup fresh dill -- finely chopped
1 grated lime zest
salt and freshly ground pepper
Combine everything in a saucepan, stir well, and bring to a boil over medium heat. Reduce the heat and simmer for 5 minutes. Season with salt and pepper to taste.
Makes 2 cups.
