2 tablespoons parsley -- finely chopped
1 tablespoon fresh tarragon -- finely chopped
2 tablespoons red onion -- finely chopped
1/2 lemon -- finely grated zest only
1 piece freshly ground black pepper -- big pinch
Mix everything together. Can be refrigerated in a tightly covered jar for 1 to 2 days.
Makes 1/3 cup (10 one-tablespoon servings)
This gremolata has a bright parsley flavor with hints of tarragon and a lot of lemon.
Sprinkle over [favorites] or ...stews, or stir about 1/2 teaspoon into a bowl of soup. Use as a garnish atop polenta or stir a small amount into a risotto.
