I've been doing a fair amount of research lately on the "best" sources for fatty acids, proteins, vitamins, etc. In all counts, the lowly egg comes on top. Protein-wise, egg white is considered the "perfect" mix of amino acids, by which all other protein mixes are measured. Fat-wise, egg yolk contains fatty acids that are very hard to get otherwise. An egg basically has all the ingredients needed to make a chicken, and chickens are omnivores, like us. Birds also use the version of sialic acid (Neu5ac) that humans have, while mammal meat uses Neu5gc, which is inflammatory for a lot of people.


Anyway, we got "scared off" eggs in the '70s, but the research never really showed any negative effects from eating eggs. The research was all based on the theoretical issues of "eating cholesterol". Since the '70s, egg consumption has gone down in the US, but heart disease has gone up. Not so in, say, Japan or China, which eat way more eggs and have lower levels of heart disease.

So yeah, eggs rock! They are also very good at "satiety", so people who tend to eat too much ... start your meal with eggs, or at least include them, in sauces, pickled chopped eggs on salads, egg drop soup, etc.

I love the simplicity of Rick's meals.  Tonight I am going to do the hard boiled egg, tuna, sour cream ensemble.  I might add a couple chopped up olives.

Lately I have been hooked on 3 eggs in a frying pan with a pouch of salmon and some shredded cheese all stirred up together.  Usually I also steam a BIG bunch of spinach to go along with that.

One of the best things about this WOE is you don't have to think back at the end of the day about the food choices you made throughout the day because... well there were none.  I like not having to think about "should I or shouldn't I" with respect to what to eat earlier in the day. You just don't, problem solved.
