Grilled Tuna Steaks with Fresh Tomato Sauce
6 4 oz. tuna steaks
Marinade:
1 cup parsley leaves
1 small onion, roughly chopped
1/2 tsp. paprika
1/2 tsp. ground cumin
1/4 tsp. freshly ground black pepper
1/4 tsp. salt
4 tbsps. lemon juice
Sauce:
2 lbs. tomatoes, chopped
2 garlic cloves, minced
1 tsp. paprika
freshly ground black pepper to taste
1/2 tsp. ground cumin
1/2 cup chopped parsley
Blend marinade ingredients in a food processor or blender. Place tuna steaks in a baking dish, and coat with marinade. Marinate for at least 1 hour in the refrigerator, turning frequently. Meanwhile, combine the sauce ingredients in a saucepan, and simmer over medium heat for 30 minutes. Taste the sauce and correct seasoning as desired. Grill the tuna steaks until they are just done, about 4 minutes per side. Remove tuna steaks from the grill, top with tomato sauce and serve.
