LOBSTER CLAW SLAW WITH HERB-MARINATED DRIED TART CHERRIES
3 cups dried tart cherries (about 1 pound)
1 1/2 cups red wine vinegar
3/4 cups extra virgin olive oil
1 1/2 teaspoons herbs d' Provence
1/4 cup salt
water
3 lbs. green cabbage (about 1 1/2 head), thinly shredded
3 lbs. cooked lobster meat, cut or shredded into bite-sized pieces
1 large white onion (about 10 oz.), halved and thinly sliced
1 large head radicchio (about 12 oz), thinly shredded
6 cups arugula, shredded, or baby arugulla (about 4 ounces)
3 tablespoons chopped fresh tarragon
1/2 cup mayonnaise
1/2 cup heavy cream
1/2 cup sour cream
Salt and pepper to taste
24 large or 48 small cooked lobster claws
Tarragon sprigs for garnish

Combine cherries, red wine vinegar, olive oil, and herbs d' Provence in a resealable jar. Marinate the cherries for at least 2 days, stirring occasionally. Drain.

In a large bowl, dissolve the salt in about 4 cups water. Add the cabbage and enough water to cover. Let the cabbage soak for about an hour. Drain.

In another large bowl, combine the cherries, cabbage, lobster meat, onion, radicchio, arugula, and tarragon.

To make the dressing, whisk together the mayonnaise, heavy cream, and sour cream. Add salt and pepper to taste. Toss with the slaw mixture - or serve the slaw undressed and, using a squeeze bottle, squirt the dressing decoratively over individual servings.

Garnish with 1 large or 2 small lobster claws and a sprig of tarragon.

Makes 12 quarts or 24 2-cup, appetizer-sized servings.
