*Ingredients:*
- 1 cup uncooked whole wheat rotini pasta
- ¼ cup low fat mayonnaise (I used Kraft reduced fat w/olive oil)
- 2 tbsp plain nonfat yogurt
- 2 tsp sweet pickle relish (I used sugar free sweet relish)
- 1 tsp dried dill
- 1 tbsp prepared yellow mustard
- Salt to taste
- ½ bag frozen green peas
- 1 green bell pepper, chopped
- 2 ribs celery, finely chopped
- 4 oz. 99% fat free ham, cubed
- ½ cup low fat cheddar cheese (optional)
*Directions:*
1. Cook pasta according to pkg directions. Drain and rinse under cold
water until completely cooled. Drain well.
2. In small bowl, combine mayo, yogurt, relish, dill mustard and salt –
stir until well blended
3. In large bowl, combine peas, bell pepper, celery & ham
4. Add pasta and dressing mixture to pea mixture and toss to coat
thoroughly.
5. Add cheese if desired and toss lightly
