Delicious Carrots and Cucumber Salad - 11.5g Carbs, 2.4g Fiber

Serves: 2
1/4 cup seasoned rice vinegar
1 Tbsp liquid stevia
1/2 Tbsp vegetable oil
1/4 Tbsp grated peeled ginger
1/4 Tbsp sea salt
1 cup sliced carrot
2 Tbsp sliced green onion
1/2 organic cucumber, halved lengthwise, seeded, and sliced
2 Tbsp minced red bell pepper
1. Whisk rice vinegar, liquid stevia, vegetable oil, ginger, and salt together in a bowl until stevia and salt are dissolved into a smooth dressing.
2. Toss carrot , green onion, bell pepper , and cucumber in the dressing to evenly coat.
3. Cover bowl with plastic wrap and refrigerate until chilled, about 30 minutes.
Serves: 2
