Kouneli Stifado - Rabbit and Onion Stew - 19.5g Carbs, 0.9g Fiber, 6g Sugar

This is clearly not a recipe that you've encountered many times before, but if you find rabbit, it's definitely worth a try. This meat is surely special and this stew does it justice with these simple, yet delicious flavors.
Prep time: 20 min
Cook time: 1 1/2 hours
Servings: 8 - 10
2 lb pearls onions, trimmed and peeled
4 garlic cloves, chopped
1 rabbits, cut in smaller pieces
1/4 cup olive oil
1 lb ripe tomatoes, peeled and chopped
2 Tbsp tomato paste
1/2 cup chicken stock
2 bay leaves
1 fresh sprig rosemary
Salt, to taste
Pepper, to taste
1. Heat the oil in a large heavy pot and stir in the meat.
2. Cook it on all sides until golden brown then add the onions and garlic.
3. Sauté for 2 minutes then add the rest of the ingredients.
4. Cover the pot with a lid and cook on low heat for 1 ½ hours. Check from time to time to see if it needs more liquid.
5. Season with salt and pepper to taste.
6. Serve the stew warm with your favorite side dish.
