Peppered Cauliflower - 5.5g Carbs, 1.3g Fiber, 2.6g Sugar

Seasoned cauliflower with tomatoes, onion, and garlic.
Prep Time: 10 min
Cook Time: 20 min
Difficulty: EASY
Servings: 5

1 Tbsp vegetable oil
1 cup fresh chopped onion
2 medium garlic cloves, minced
1 cup chopped tomato
1/4 tsp salt
1/4 tsp black pepper, or more, to taste
1/4 tsp ground red pepper (cayenne)
1 lb fresh cauliflower florets

1. In skillet, over medium-high, heat oil. Add onions and garlic, cook
5 minutes or until golden.

2. Add tomato, salt, black and red pepper. Stir and cook 2 minutes.

3. Stir in cauliflower, cover. Lower heat, simmer 12 minutes or until
soft.
