Corn Casserole from the Oakwood Cafe

2 packages cream cheese -- (8-ounce) room temperature
1 cup butter -- (2 sticks) plus 3 tablespoons butter, room temperature, divided
1/4 cup whole milk
2 pounds frozen shoepeg corn -- thawed
Salt and pepper -- to taste
1 cup crushed Ritz crackers -- 1 sleeve

Preheat oven to 350 degrees. Grease a 9-by-13-inch baking dish.

In a bowl, beat cream cheese, 1 cup butter and milk; stir in the corn and
add salt and pepper to taste. Melt the remaining 3 tablespoons butter. In
a small bowl, combine the crackers and melted butter. Sprinkle evenly over
the corn mixture. Bake until bubbly, about 30 minutes.

One good turn deserves another, and since the owners of Oakwood Cafe
[Dalton, Georgia] got this recipe from someone, they were happy to pass
it along. "It was something we had at Thanksgiving at my wife's aunt's
house about six years ago, " said Oakwood co-owner Kasey Carpenter. He
liked it so much, he asked his wife's cousin Kim Sibey to share it. "Now
we just do it for a few more people, " he said. The restaurant uses 22
pounds of corn per batch.
