1-1/2 lb sea scallops, rinsed
1 Tbsp unsalted butter
1/2 tsp tarragon OR 1-1/2 tsp fresh, chopped
1/4 cup clam juice or vegetable stock
Preheat oven to 375 degrees F.
Arrange scallops in a buttered baking dish. Drizzle with clam juice.
Sprinkle with tarragon and pepper to taste. Dot with butter and bake
5-8 minutes or until scallops are cooked throughout.
