Yes, eggs are magic when it comes to appetite! I think they are beginning to understand *why* ... has to do with types of amino acids and a chemical called orexin, but the yolks also have some kinds of fats that the body needs, but are hard to get from most food sources. 


I love eggdrop soup too! My favorite quickie soup is to use miso paste. Boil the water, add the eggs slowly to make the egg-drop. Then mix the miso paste with a little hot water to make it more liquid, and mix it in after the heat is turned off, so the miso doesn't boil (that kills some of the good taste). Add some fresh chopped green onions and enjoy! Miso is loaded with good vitamins and it keeps forever in the fridge, so it's easier than opening a can of soup, even!

Last night I made egg drop soup.  I usually have a pot of fresh broth made (pig feet, marrow bone, chicken wings, chicken thigh) so I used two cups of broth, two cups of water, 6 eggs, and a little curry powder, salt and pepper.  It was really good - and filling.  Followed that with a pound of steamed cod dipped in butter.
