Walnut Beef Stew - 10.7g Carbs, 3.3g Fiber, 4.5g Sugar

A hearty Aussie stew made of beef, vegetables, and walnuts.

2 lb Beef, chuck tender steak, raw, 1/4" trim , cut into 2-inch strips
2 Tbsp unsalted butter
2 Tbsp olive oil
1 medium garlic cloves, crushed
1 large red bell peppers, cut into strips
1 large onion, cut in strips
1 1/2 cup chopped walnuts
1 cup no-salt tomato sauce
1 pinch salt (to taste)
1 pinch black pepper (to taste)
1 1/2 lb fresh mushroom slices
1. In large pot, melt butter in oil over medium heat. Cook meat in
hot butter and oil until browned on all sides. Remove with slotted
spoon to a warmed dish.
2. Place garlic, peppers, and onion in remaining oil, and lightly
fry until onion is clear. Return meat to pan; lightly mix together.
3. Add walnut pieces, cook, and stir for one minute. Stir in tomato
sauce, and season to taste with salt and pepper. Cover, and bring
to boil. Reduce heat, and simmer for 1-1/2 hours.
4. Stir in mushrooms; cook for another 20 minutes.
Additional Information: Great served over brown rice.
