Funky Mezze Platter Baba Ganoush

3 medium eggplants -- halved
3 tablespoons extra virgin olive oil
1 clove garlic
1 pinch salt
2 tablespoons lemon juice
1 tablespoon tahini -- sesame seed butter
3 1/2 ounces non-fat yogurt
Preheat oven to 400 degrees F.
Brush eggplant with a little of the oil and rub each one with some garlic.
Roast in oven for 40 to 45 minutes, or until completely collapsed and
soft.
When cool enough to handle, scrape out flesh and place into a food
processor. Add remaining ingredients and process until smooth.
Taste and add a little more salt or lemon juice if required. Refrigerate
until ready to serve.
Serves 6, as part of a mezze platter
