Mushroom Pate

1 pound mixed mushrooms -- roughly chopped
1 shallot -- finely chopped
1 clove garlic -- crushed
1 sprig thyme -- leaves picked and chopped
sea salt and freshly ground black pepper
1/4 cup sour cream
Cook mushrooms in a non-stick skillet (frying pan) over high heat for 5
minutes. Add shallot, garlic, and thyme leaves and cook until mushrooms
have cooked and all liquid has evaporated.
Season with salt and pepper and cool completely. Transfer to a food
processor and add sour cream, process until smooth. Form pate into a log
and wrap tightly with plastic wrap. Chill until completely hardened.
Slice mushroom pate into 1-inch thick slices and serve with crackers,
crudite, or pita bread.
Serves 4
