Blue Cheese Tarts

1 sheet frozen puff pastry sheet -- 10x12-inches
4 ounces blue cheese -- room temperature
8 ounces cream cheese -- room temperature
2 ounces sun-dried tomatoes
1/2 cup pesto sauce
1/2 ounce shredded Parmesan cheese -- to 1 ounce
1/4 cup chopped walnuts

Partially defrost puff pastry and cut sheet into 9 equal squares, and then
cut each square diagonally to create 18 triangles.

Lay the triangles on a baking sheet. Bake in 450 degrees F. for 10 to 12
minutes until golden brown.

Combine blue cheese and cream cheese with sun-dried tomatoes. Blend and
mash with a fork.

Equally divide cheese mixture over 18 triangles.

Spread pesto over cheese.

Sprinkle with Parmesan cheese.

Sprinkle walnuts on top.

Place under broiler and broil briefly until bubbly. Watch carefully so
they don't darken too much! Serve warm.

Makes 18 tarts
Prep time: 15 mins
Baking time: 10 to 12 mins

Tarts may be made several hours in advance except for the last step of
finishing under the broiler.
