Italian Garlic and Oil Sauce

1 cup extra virgin olive oil
10 garlic cloves -- minced
1/2 tablespoon minced fresh parsley
1/4 teaspoon red pepper flakes
In a saucepan or skillet, warm the olive oil over medium-low heat. Add garlic, parsley, and red pepper flakes. Cook, stirring often, for 4 to 5 minutes or until garlic has softened.
Remove from heat and cool slightly before using in recipes. Excess sauce can be tossed with pasta and Parmesan or refrigerated for later use.
Makes 1 cup (8 two-tablespoon servings)
AuthorNote: Although this sauce is super-simple, care must be taken not to burn the garlic. Burnt garlic will make the sauce bitter.
