Slow Cooker Sausage and Tomato Breakfast Casserole - No Eggs

2 pounds mixed-color cherry tomatoes
2 pounds smoked Italian sausage -- sliced ( I used one pound sweet, and one pound spicy)
2 small yellow onions -- sliced
3 bell peppers -- (red, yellow, orange)
3 medium russet potatoes -- diced
1 tablespoon Italian seasoning
1/2 teaspoon kosher salt

Use a 6-quart slow cooker.

Wash the cherry tomatoes and toss into your slow cooker. Add the sausage, onions, bell peppers, and potatoes. Sprinkle in the Italian seasoning and salt, and stir to combine. Do not add water.

Cover and cook on low for 6 to 8 hours. If the tomatoes don't pop right away, turn to high for about an hour, or until the tomatoes are mostly squished. I set my slow cooker to cook on low for 7 hours overnight, and it stays warm until breakfast time.

Serves 8 to 10
