This is the only recipe I use for sweet breads. My favorite combos. are
Zucchini/ pineapple or banana/pineapple. Even the plain Zucchini is
wonderful. Give it a try. Sandee
A to Z Bread

Makes 2 loaves

3 C. flour
1 C. oil
1 t. salt
2 C. sugar or Splenda
1 t. soda
2 C. A to Z *
3 t. cinnamon
3 t. vanilla
½ t. baking powder
1 C. chopped nuts
3 eggs

Sift dry ingredients; set aside. Beat eggs in a large bowl. Add oil &
sugar, cream well. Add A to Z and vanilla. Add dry ingredients. Mix well.
Add
nuts. Spoon into well greased loaf pans.

Bake in preheated oven at 325 for 1 hour.

*A to Z Use one of the following or a mixture of the following to equal 2
cups, except as indicated.
Apples - grated
Apple sauce
Apricots – chopped
Bananas – mashed
Carrots – grated
Cherries – pitted & chopped
Coconut – fresh, ground
Dates – pitted & finely chopped
Eggplant – ground
Figs – finely chopped
Grapes – seedless
Honey – omit sugar above
Lemons – use only ½ C. juice
Marmalade – omit 1 C. sugar
Mincemeat
Oranges – chopped
Peaches – fresh or canned, chopped
Peppermint – use only ½ Cup
Pears – chopped
Pineapple – crushed, well drained
Prunes – chopped (use only 1 cup)
Pumpkin – canned
Raisins
Raspberries
Rhubarb – finely chopped
Strawberries, fresh or drained frozen
Sweet Potatoes – grated coarsly
Tapioca – cooked
Tomatoes – use ½ C. sugar only
Yams – cooked & mashed
Yogurt – plain or flavored
Zucchini – ground or grated, drained
