Caramelized Onion and Cannellini Bean Dip - 9g Carbs, 2g Fiber

This dip is creamy and delicious. Instead of dairy it has heart-healthy white beans creating a rich and creamy caramelized onion dip. Serve with pita bread.

1 Tbsp olive oil
1 sweet onion, sliced
1 sprig fresh rosemary
11/2 cups canned cannellini beans, drained and rinsed
2 cloves garlic
2 tsp fresh lemon juice
Ground pepper and/or cayenne pepper to taste (optional)

Over medium heat, heat olive oil in skillet.  Add onions and rosemary sprig; sauté until very soft or caramelized. Remove rosemary stem.

Add onion and all other ingredients to food processor and blend until smooth.

Serving Size: 2 Tbsp
