Easy French Onion Soup - 14.7g Carbs, 2g Fiber, 0g Sugar

A great meal on a cold day!

Servings: 2

1/4 cup water
1 medium yellow onion
4 cups beef broth
1/2 cup shredded part-skim mozzarella cheese
2 slices whole-wheat bread

Bring the water to a boil in a medium saucepan.

Slice the onion into this strips and add to the water. Continue cooking until the onions clarify.

Once the onions are translucent, add the beef broth. Bring to a boil and then simmer for 15-20 minutes.

Once done, place two cups of soup into bowl, garnish with 1 oz shredded mozzarella and 1 Tbsp croutons. Place under the broiler to melt the cheese if desired.
