Tahini Dressing

1 garlic clove
1 teaspoon salt
1 cup tahini
1/2 cup water
1/2 cup freshly squeezed lemon juice
To garnish: -- paprika or cumin
Use a mortar and pestle or small food processor to make the garlic and
salt into a paste.
Add the tahini; the mixture will be very thick. Add the water, followed by
the lemon juice. If the mixture is thicker than you'd like, add more
water.
Check for salt and serve, topped with a little paprika or cumin.
Makes about 2 cups (8 one-quarter cup servings)
