  1         Tablespoon  Extra Virgin Olive Oil
  2             cloves  garlic -- minced
  1                cup  onion -- thinly sliced
  3               cups  red bell pepper -- thinly sliced
     3/4           cup  soy sauce
  1 1/2    Tablespoons  Genmai Miso -- dissolved in 3 T. cold water, or to taste
  2          teaspoons  fresh parsley -- finely minced
 
 
Heat the oil in a skillet and sauté the garlic and onions for 1 to 2
minutes. Add the peppers and sauté another 3 minutes. Add the soy sauce
and pureed miso. Cover, reduce the flame and simmer 5 minutes, without
boiling, until the onions and peppers are tender. Remove from the flame
and mix in the parsley. Serve over any Eden brand pasta, cooked organic
polenta or other organic grains.
