Napa Cabbage with Sesame Vinaigrette

1/4 cup sesame oil
1/4 cup olive oil
1/4 cup lime juice -- (2 limes)
2 Tablespoons rice vinegar
2 Tablespoons soy sauce
1 teaspoon sugar
1 teaspoon minced fresh jalapeno -- or other hot chile, or cayenne to taste
salt and freshly ground black pepper
1 pound Napa cabbage -- about 1 small head
1 carrot -- peeled and thinly sliced
2 Tablespoons minced fresh mint
1/2 cup bean sprouts -- (optional)
Combine the first 8 ingredients and whisk to blend. Core and shred the
cabbage, toss with the remaining ingredients. Top with the dressing and
serve.
Makes 4 servings
Time: 15 mins
Other Greens to Use: green or red cabbage, or a combination.
AuthorNote: My friend Chris Schlesinger serves this with grilled shrimp at
his restaurant, the East Coast Grill, and that's a great idea. But I like
this simple little salad by itself.
