Creamy Artichoke Dip - 11.6g Carbs, 5.3g Fiber, 2.5g Sugar

1 ripe avocado
1 (6 oz jar) artichokes hearts
2 small zucchini, peeled and diced
½ large lemon
2 cloves garlic, peeled
1 Tbsp olive oil
Salt and Pepper to taste
1. Combine the avocado, artichoke hearts and zucchini and garlic in food processor. Pulse to blend until well combined.
2. Pour the mixture into the slow cooker and squeeze the lemon over it.
3. Drizzle the olive oil around the outer edges of the slow cooker and season to taste with salt and pepper.
4. Cover and cook on low for 3 hours.
5. Serve hot with fresh vegetables for dipping.
