Spicy Cole Slaw

2 Tablespoons Dijon mustard
2 Tablespoons sherry vinegar -- or balsamic vinegar
1/2 cup olive oil -- or peanut, or vegetable oil
1 Tablespoon sugar
6 cups shredded Napa cabbage -- or Savoy, green or red cabbage
2 cups diced red pepper
1 cup diced scallion
salt & freshly ground pepper
1/4 cup minced parsley
Whisk together the mustard and vinegar; add he oil a little at a time,
whisking all the while. Add the sugar and whisk to dissolve. Combine the
cabbage, pepper, and scallion, and toss with the dressing. Season with
salt and pepper and refrigerate until ready to serve (it's best to let
this rest for an hour or so before serving to allow the flavors to
mellow). Just before serving, toss with minced parsley.
Makes about 2 quarts (16 one-half cup servings)
Time: 20 minutes
VARIATION: Cole Slaw Asian-Style: combine the cabbage, red pepper, and
scallion as above. Toast a tablespoon of sesame seeds in a dry skillet
over medium heat, shaking, until they color.
Combine them with 1/2 cup rice vinegar, 1 teaspoon minced or grated
ginger, 1 Tablespoon sesame oil, 2 Tablespoons peanut oil, and whisk
thoroughly. Toss with the cabbage mixture and serve.
AuthorNote: Prettier and better tasting than the traditional bland,
mayonnaise slaw. add a few fennel or anise seeds if you like.
