Turkey with Cilantro Pesto - 1.3g Carbs, 0.5g Fiber, 0.2g Sugar

Add a kick to turkey breast with this easy pesto recipe. Just blend
cilantro, walnuts, garlic, and lime juice to make a tangy topping.
Spread the mixture over your turkey, and pop it in the oven for just
25 minutes. This savory dish contains fewer than 200 calories, so
serve it over pasta for a complete meal.

1 bunch cilantro
1/4 cup walnuts
2 cloves garlic
1 tsp lime juice
1/2 tsp lime peel
1 Tbsp canola oil
1 1/2 lb boneless turkey breast

Preheat the oven to 400 degrees F. Coat a roasting pan with cooking
spray.

Combine the cilantro, walnuts, garlic, lime juice, and lime peel in
a blender or food processor. Pulse to puree. Add the oil with the
processor running until well blended.

Place the turkey breast in the prepared roasting pan and spread the
top and sides with the cilantro mixture. Roast for 25 to 30 minutes,
or until a thermometer inserted in the thickest portion registers
170 degrees F and the juices run clear.

Serving Suggestions
MAKE IT AGAIN: Serve any leftover turkey breast over Spinach and
Fennel Salad, or cut up 1/2 pound of the turkey for Enchiladas Suiza.
