Gingered Cabbage

2 Tablespoons peanut oil -- or olive oil
1 1/2 pounds Savoy cabbage -- 1 small head, cored, shredded, and chopped
1 Tablespoon minced garlic
salt and freshly ground black pepper -- to taste
1 Tablespoon peeled and minced ginger -- (fresh root)
juice of 1 lemon
To garnish: -- minced fresh parsley or cilantro
Heat the oil in a large skillet over medium-high heat, and saute the
cabbage, stirring occasionally. When it is limp but not mushy, after about
10 minutes, add the garlic, salt, and pepper, and cook another 2 minutes,
stirring. Add the ginger, cook another minute, and remove to a platter.
Drizzle with the lemon juice, sprinkle with the parsley or cilantro, and
serve.
Serves 4
Time: 30 mins
Other Greens to Use: Any cabbage or chard
AuthorNote: What makes cabbage great with ginger? I don't know, but there
isn't a variety - green, Savoy, Red, Chinese, or otherwise, that doesn't
take to this treatment.
